This combat between souls gave birth to Almanera, because in this chess game the freshness of star anise won, the sweetness of dried fruit, and caramelized sugar, the warmth of rose and milk, but above all it won the promise of the smell of coffee, that small amount of black liquid, which for much represents the beginning and the end, but which is always a certainty.
Almanera is the dark side of each of us, that part that we keep at bay, that we try to put to sleep and in some circumstances takes over our white soul.
