A candied citrus, soft, juicy, not harsh, at times gourmand.
The Diamante Cedar (Citrus medica var. Vulgaris [1] or cv. Diamante [2] - Italian: cedro di diamante) is the world's best-known variety of Cedar and is named after the town of Diamante, located in the province of Cosenza, Calabria, on the southwestern coast of Italy, which is its best-known growing point.
The Diamante Cedar has been celebrated by poets such as Byron and D'Annunzio. It is a fresh and sweet citrus fruit often used in the world of pastry precisely because it is not as acidic as other citrus fruits. The sweet facets of Cedar are enhanced in the fragrance with a modern twist brought by a spicy accord in the heart and a soft, musky base.
